Several classic science-fiction books fit this bill. A World Out of Time by Larry Niven, Mission of Gravity by Hal Clement, The Fountains of Paradise by Arthur C. Clarke, and Starship Troopers by Robert Heinlein are all on my "good to read anytime" list.
I also have several books of epic poetry that I'll read over and over. La Divina Commedia by Dante Alighieri, the Nibelungenlied, The Song of Roland... all good for a re-reading from time to time. I'm currently adding The Poetic Edda to that list.
